Premium ingredients and reinterpreted technique live together in a setting that balances authenticity with a refined, welcoming proposition. We built a universe that fuses culture, design and experience.

We began with contextual market research that revealed clear positioning opportunities in a city crowded with dining options. We found a consumer who values cultural authenticity, wants a clear difference from Tex-Mex, and aspires to Mexican gourmet experiences in step with global trends.

Why

Because culinary luxury can also be close and authentic.

The audience wants experiences that carry identity, exclusivity and comfort, without stiffness or pretence. Polanco answers with a proposition that honours Mexican cultural richness and reinterprets it in a refined language, combining Barragán minimalism with Oaxacan textile richness.
